But when it comes to eating lentils in a more savoury way, that is the challenge that comes with the availability of fresh produce, says the UK’s leading nutritionist, Dr. Jane Harrison.
“Lentils are a great source of protein, fiber and essential vitamins, but they are also quite low in fat and sugar, so I’d advise against eating them as an appetizer or snack,” says Harrison, who has been a clinical nutritionist for more than 30 years.
“Instead, eat them as a salad or add to a soup or stew.
You can also freeze them for later use.”
What is lentil?
The term lentil comes from the Latin word for “milk.”
It refers to the milky liquid produced by soaking beans for a long period of time.
This liquid is then drained off and used to make a paste that can be used as a thickener.
Lentil is made by soaking the beans in water for a period of several days and then soaking them again.
This process produces a paste which is then fermented with yeast and water.
Lettuce is also made from the milking process.
It’s not the most nutritious of ingredients, but it is the most convenient to prepare.
Lentils, however, contain a protein and carbohydrate called bran that is needed for digestion.
When cooked, the bran forms a solid gel, which can be stored in a freezer for use later.
What’s a goli?
Goli is an Italian term for “green” and is used to describe vegetables that are inedible and have a sweet or savouriness that’s not found in their fleshy counterparts.
“In some ways, goli is a bit like cabbage, because it’s quite bitter,” Harrison explains.
“So the best way to eat goli would be as a side dish with pasta.
But if you’re not hungry enough to eat pasta, then you can simply enjoy the goli as a dessert.”
Lettuces are a popular option for this type of dish, as they contain a good amount of protein and fiber, which is great for people who are looking for a healthier alternative to pasta.
But not all vegetables can be made into goli, Harrison says.
She says that in some cases, you can buy vegetables from your local supermarket and then add them to soups, stews and salads.
For instance, a large tomato can be cooked in a soup, while an onion, tomato, or eggplant can be eaten as a dip or as a garnish.
“If you have a vegetable that is a little bit lower in protein than the other vegetables in the same batch, like lentils are, then they’ll be fine,” Harrison says, but you’ll have to add a little more fibre to make sure you get the full benefit of the lentils.
“I like to add some fresh herbs to my lentils for extra nutrients, as well as some spices like cumin, garlic and oregano,” Harrison adds.
“If you’re adding a little extra fiber, then I would say you can add a tablespoon or two of it, just so you get more fibre.”
How do I cook lentils?
When you want to add them as side dishes to a dish, add them in the blender or on the side with pasta, or use them as filling on a salad.
“Add some to a soupe, or add some to the pasta with the greens,” says Amanda Koehler, the editor of Healthy Eating magazine.
“Or you can cook the lentil in a pressure cooker, where the lentile is cooked over low heat for a longer period of hours, or in a frying pan, for a very short amount of time.”
How can I add lentils to my salad?
You can add them straight from the can to salads or soups.
“In most situations, you’ll want to cook them in a large pot,” Harrison recommends.
“Then, as you cook them, you will notice the gel starts to break down and it’s a bit easier to digest.”
“When you add them, they’re best cooked in the pressure cooker,” she adds.
But you can also add them directly to the salad as a main dish.
“The trick is to make it a little thicker so you don’t overcook it,” Harrison notes.
“You’ll need to add about half of the liquid to the pressure cook to achieve the right amount of liquid, but this is really just a matter of preference.”
